One or two days recently have felt a little spring-like although the cold hasn't gone completely - but we are beginning to see a few early crops of Salad leaves from our suppliers, both locally and further afield.

Some of the larger boxes have a bulb of fresh garlic in too. This is a pungently aromatic vegetable though, unlike its dried counterpart, some of the strength is lost in the cooking process. It doesn't have quite the same distinction between the dry outer skin and fleshy cloves of later garlic and rather than break out individual cloves it is best to trim off the bottom and then cut thin slices across the entire bulb. Any unused portion should be wrapped in cling film and left ideally in the fridge although this may cause a degree of odour contamination of neighbouring products - so beware of storing in with raspberries for example! You could seal the cut wrapped bulb in a plastic tub but again this may leave an odour attached to the plastic for a while.
