Chicory is another rather overlooked vegetable. It can be a little invisible in the shop, too, as it doesn't like the light and so we tend to keep it in the fridge and in its dark blue waxed paper wrapping. As a bitter leaf it is most usually found in a mixed salad with a good vinaigrette dressing but it is worth trying it cooked as well.
Here's a very simple recipe which involves roasting the heads with red onions and chilli. The caramelisation process sweetens the bitterness. Try it and let us know what you think.
4 chicory heads, halved through the middle
3 red onions, cut into wedges
3 tbsp light brown soft sugar
1 red chilli, deseeded and chopped 0r a tsp of chilli flakes
2 tbsp extra virgin olive oil
2 tbsp balsamic, sherry or cider vinegar
Preheat the oven to 190˚C, gas mark 5. Put the chicory and onions in a baking dish and sprinkle over the sugar and chilli. Drizzle with the oil and vinegar. Season.
Place in the oven. Bake for 35 minutes until golden and caramelised. Serve hot or at room temperature.
