Broccoli Heston Blumenthal Style.

Purple Sprouting BroccoliAlthough this technique was probably intended for using with larger heads of broccoli, it’s worth trying with purple sprouting but it cooks very quickly. No water is used and the result is quite intensely flavoured. Try adding a little garlic along with the butter, or a little lemon zest.

  • about 450g Purple Sprouting Broccoli
  • Olive Oil
  • Butter
  • Salt and Pepper


  1. Cut the broccoli shoots into 2cm lengths, splitting any large heads so that the pieces are even sized.
  2. Heat a tablespoon of olive oil in a saucepan for which you have a tight fitting lid.
  3. Add the broccoli and replace the lid.
  4. Cook for one minute.
  5. Shake the pan, remove the lid, season well with salt and pepper and add any flavourings and a knob of butter.
  6. Replace the lid and cook for another minute or until the broccoli is tender.
