Cucumber and Yoghurt Salad - Cacik

‘CACIK’ a popular Turkish mezze from ‘A New Book Of Middle Eastern Food’ by Claudia Roden.


  • 1 lg cucumber
  • salt
  • 2 cloves of garlic
  • white pepper
  • 450ml yoghurt or a mixture of sour cream and yoghurt
  • 1 tbsp dried or 3 tbsp chopped fresh mint


  1. Peel and dice the cucumber. salt the cucumbers
  2. Sprinkle it with salt and leave to drain for ½ an hour.
  3. Using a pestle and mortar crush the garlic with a little salt and stir into the yoghurt adding more salt and pepper to taste.
  4. Stir in the mint and cucumber.
  5. Serve with flatbreads.
  6. For a sharper flavour stir in a little vinegar and olive oil.
