Cucumber, apple and mint salad

Hazelnut oil has a lovely strong flavour but olive, walnut and sunflower oil would be fine too....


  • 1 cucumber,
  • 100g hazelnuts,
  • 3 red dessert apples,
  • 2 tablespoons chopped mint.
  • For the dressing...
  • 2 tablespoons hazelnut oil,
  • ½ tablespoon cider vinegar,
  • a pinch of salt.



  1. Peel and quarter the cucumber lenthways, scoop out the seeds and chop into 1cm pieces.
  2. Chop the hazelnuts in half and slice and core the apples (don’t peel them- the colour of the skin makes the salad pretty).
  3. Cut them into similar size pieces to the cucumber.
  4. Shake together the oil, vinegar and salt and dress the salad immediately to prevent the apple browning.
  5. Sprinkle with the chopped mint.
