Courgettes really come into their own in summer and we often find a glut of them on the market just as every allotmenteer is also picking more than they know what to do with.  This recipe Matt first posted in the Organic Box Newsletter; if you have a favourite courgette recipe share them with a wider audience - send me an email and I'll post them on here!   • 400g courgettes,
  • 3 spring onions or 1 small onion very finely chopped,
  • 4 eggs,
  • salt and pepper,
  • 2 tbsp milk,
  • 1 tbsp gram flour,
  • a handful of fresh parsley or coriander finely chopped,
  • a little oil for frying.....


  1. Grate the courgettes, sprinkle with a teaspoon of salt and leave to drain in a colander for about and hour; they should lose quite a lot of liquid in this time but you’ll need to give them a good squeeze with your hands too.
  2. Sieve the flour into a bowl and mix to a paste with the milk.
  3. Beat in the eggs, a good pinch of salt and some ground pepper, the herbs and finally the onions and courgettes.
  4. Heat a little oil in a frying pan and add a tablespoon of the mixture, spreading it out with the back of the spoon.
  5. You can cook several at one time, flipping them over after ½ a minute to briefly cook the other side. The mixture makes about 12 small ‘pancakes’, enough for 4 people.
