This salad is particularly suited to the short knobbly ‘ridge’ cucumbers that crop up from time to time during the season. They have a slightly stronger flavour and less watery texture than the usual ones. The orange blossom water lends an exotic perfume to the dish but isn’t essential.
1 Long or two short cucumbers,
3 tbsp olive oil,
2 tbsp lemon juice,
1 tsp orange flower water,
1 tbsp chopped fresh mint.
Peel and grate the cucumber.
Sprinkle with salt and leave to drain in a colander for a few minutes.
Press down briefly to remove a little surplus water before mixing with the rest of the ingredients.
