Dave is sharing a family recipe from his Mum! Sounds like a great one to dig out again when the English Apple season starts after the summer... Bramleys would be ideal for this recipe although Blenheims and Grenadiers would also be great. I wonder if you could use conference pears and make a Pear Chutney too. What do you think Dave?
3 ½ lbs Sour Apples
½ lb Onions
½ lb Sultanas
1 lb Brown Sugar
¼ oz Salt
2 ozs Whole Ginger
1 oz Garlic
½ Teaspoon Cayenne Pepper
1d Liquorice (Optional – we don’t bother!)
¾ pint Vinegar
Bruise ginger and tie in muslin.
Chop or mince all ingredients, bring to the boil, and simmer for 2 hours or more stirring frequently.
Pot up in sterile jars.
