This is my contribution to our ongoing Share a Recipe campaign - inspired by Nigella's "Forever Summer" which I was just watching on the Food Channel. I've adapted her recipe by adding an onion, I can't make soup without an onion!
I always think the golden courgettes (zucchini) we get from the market at this time of year look as if they should taste rather more exciting than their green cousins. The lemon in this recipe really helps to give the dish a zing. You could of course use green courgettes. Being in a less well off part of the country and without access to a shop like Beanies Nigella had to make do with dried turmeric but I suggest you try our organic fresh turmeric for a fresher pungency and bright colour.
This takes little time to prepare and would make a delicious light summer lunch
1 large onion chopped
3 yellow courgettes, diced into 1cm (approx) pieces
1 tsp ground turmeric or 1 tsp of grated fresh turmeric
100gms basmati rice
1 litre vegetable stock
Heat the oil in a large pan and gently fry the onion until translucent
Add the chopped courgettes, turmeric (dried or fresh) and finely grate the lemon zest into the mixture. Continue to fry until the courgette starts to soften. (If using dried turmeric keep the fry moving to prevent the turmeric from burning.)
Add the lemon juice, stock and bring to the boil
Add the basmati rice and simmer on a low to medium heat until the rice is cooked.
Serve with some crusty bread and maybe a sprinkling of parmesan?
