Share a recipe - Jack’s Leeky Goat’s Cheese Bake

Ever been worried by the thought of Goat's cheese?  Afraid it tastes too Goat-y?  We sell two different varieties of soft goat's cheese Merci Chef and the Welsh Pant-ys-Gawn. Our part-timer, Jack, would like to allay your concerns, he has given us two recipes to share, this is the first:Jackie boy!

Leeky Goat cheese bake


  • 1 Leek
  • 1 Courgette
  • 1 tin Suma Butter BeansOne of Suma's fine range of tinned pulses. Find them on the shelves as you go into the veg room.
  • Mushrooms 300g
  • 1 - 2 cloves garlic, crushed
  • Ground or whole cumin
  • 1 - 2 rounds of soft goats cheese 
  • soya cream 
  • flaked almonds (optional)


  1. Fry Leek with Garlic and Cumin
  2. 1 Tin of Butter beans and grate a courgette into the pan.
  3. Add lots of mushrooms
  4. 1/2 rounds of soft goats cheese (can replace one round with other cheese if wanted)
  5. Add a slosh of soya cream
  6. Bake in the oven with flaked almonds on top
