Spring Cabbage and Feta Parcels

In this recipe spring cabbage gets the sort of treatment usually reserved for spinach, but to good effect......for about 12 parcels to feed 4 people......


  • 250g filo pastry,
  • 100g butter melted,
  • 1 smallish spring cabbage,
  • 150g feta cheese,
  • 100g cream cheese,
  • 2 tbsp chopped fresh parsley,
  • 2 tbsp chopped fresh mint,
  • salt and black pepper 


  1. Cut the cabbage in half lengthways and cut out the stalk.
  2. Finely shred the leaves and blanch in boiling water for 4 minutes, drain well.
  3. Mix with the cheeses and herbs, taste, and season if necessary.
  4. Cut sheets of filo pastry into pieces about 15 cm wide and 30cm long.
  5. Brush one with melted butter and place a heaped tablespoon of the filling along one of the narrower sides, spreading it into a strip about 10cm long parallel with the edge.
  6. Fold in the long sides to partially enclose the filling and roll up to create a parcel.
  7. Repeat until the mixture is used up and brush the top of each parcel with the remaining butter.
  8. They can be stored for a couple of hours in the fridge.
  9. To bake them, preheat the oven to 180c and cook for 15 minutes.
