Student recipe - vegetarian sausage goulash

This is a personal student favourite of mine that is inspired by Sharon Buthlay's cookbook Meat and 2 veggies. It is perfect when served with a crusty baguette.(Ingredients for four people)


  • 8 vegetarian sausages
  • 2 white onions
  • 1 clove of garlic
  • 2 tablespoons of olive oil
  • 1 tablespoon of plain flour
  • 1 tablespoon of paprika
  • 400g of tinned chopped tomatoes
  • 1 green pepper
  • 1 red pepper
  • 150ml of crème fraiche
  • 1 tablespoon of lemon juice
  • Salt and pepper for seasoning


1. Brush vegetarian sausages with a little olive oil and follow cooking instructions, turn frequently and wait for them to be lightly browned on all sides
2. Chop onions, garlic and peppers
3. Put olive oil in a large heavy based saucepan and warm over a gentle heat
4. Add onions, garlic, pepper and paprika and cook on a medium heat for 5 minutes until the onion is softened
5. Add the flour and stir well for another 5 minutes
6. Add the chopped tomatoes, season with salt and pepper, stir and cook for another 5 minutes
7. Slice the sausages into 5 cm slices and place into a casserole dish
8. Pour the tomato sauce over the dish and cover with foil or a lid and cook in the oven on 200c for 30 minutes
9. Once cooked mix the lemon juice and crème fraiche
