Just when you thought you’d baked enough banana bread in your life… along comes Aaron to revolutionise a lockdown classic!
Ingredients (all available at Beanies!):
3 large very ripe bananas (or 5 small)
75ml vegetable oil or sunflower oil
100g brown sugar
225g Caudwell’s plain flour
3 heaped tsp baking powder
3 tsp cinnamon or mixed spice
50g natural glacé cherries
75g vegan chocolate chips
2 tsp vegan red food colouring
Method:
STEP 1. Heat oven to 200C/180C fan. Mash 5 peeled bananas with a fork, then mix well with oil and brown sugar.
STEP 2. Add the plain flour, baking powder and cinnamon or mixed spice, and combine well. Add the cherries (chopped or whole – it’s up to you!) and vegan chocolate chips. Once everything is combined, add the red food colouring and mix well (or mix less if you want marble effect).
STEP 3. Bake in an oiled, lined 2lb loaf tin for 15-20 mins, then cover with foil.
STEP 4. Bake for another 20 minutes, or until a skewer comes out clean.
STEP 5. Allow to cool a little before slicing. I love to eat this with a dollop of dairy free yoghurt or meridian peanut butter!
